Zucchini Noodle Mason Jar Salad

Ingredients
  

2 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup corn (fresh or canned)

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olives, sliced (optional)

For the Dressing:

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon honey or maple syrup

Salt and pepper to taste

1/2 teaspoon dried oregano

Prepare the Zucchini Noodles: Using a spiralizer, create long, delicate zucchini noodles. If you don’t have a spiralizer, a vegetable peeler can work as well—slice the zucchini into ribbons, then chop them into bite-sized pieces. Place the noodles in a bowl, lightly sprinkle with salt, and let them sit for about 10 minutes to soften. Afterward, drain off any excess moisture.

    Make the Dressing: In a small bowl or a jar with a secure lid, mix together the olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, pepper, and dried oregano. Whisk vigorously or seal the jar and shake it until the dressing is well combined and emulsified. Taste the dressing and adjust the seasoning as needed.

      Layer the Mason Jar: In a large mason jar or several small jars, layer your ingredients for optimum freshness and flavor:

        - Begin with the dressing at the bottom; this keeps the noodles from becoming soggy.

          - Add in the zucchini noodles next, layering them neatly.

            - Follow with the diced cucumbers, halved cherry tomatoes, corn, diced red bell pepper, sliced red onion, and the olives (if using).

              - Finally, crown it with the crumbled feta cheese and a generous sprinkle of fresh parsley.

                Seal and Store: Securely seal the jar(s) with their lids. Store in the refrigerator, where they can remain fresh for up to 5 days.
