2 medium zucchinis, grated

2 cups elbow macaroni

2 tablespoons unsalted butter

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 teaspoon mustard powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup breadcrumbs (for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Boil the Pasta: In a large pot, fill it with salted water and bring to a boil over high heat. Once boiling, add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta thoroughly and set aside.

    Prepare the Zucchini: While the pasta is cooking, grate the zucchinis and place them in a colander. Sprinkle them lightly with salt and allow them to rest for about 10 minutes. This will draw out excess moisture. After resting, use a clean kitchen towel to gently squeeze out any remaining water from the zucchini.

      Sauté Vegetables: In a large skillet set over medium heat, melt the butter along with the olive oil. Add the finely chopped onion to the skillet and sauté for approximately 3 minutes, or until the onion is translucent and tender. Introduce the minced garlic and continue cooking for another minute, allowing the flavors to meld.

        Make the Cheese Sauce: Reduce the heat to medium-low and stir in the grated zucchini, cooking for about 5 minutes, until softened. Gradually pour in the whole milk, stirring consistently until the mixture begins to gently simmer. Incorporate the shredded cheddar cheese, grated Parmesan cheese, mustard powder, smoked paprika, and season with salt and pepper.
