2 medium zucchinis, grated or finely chopped

2 cups cooked rice (preferably day-old for better texture)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 large eggs, lightly beaten

1 cup mixed vegetables (such as carrots, peas, bell peppers, etc.)

3 green onions, finely chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper to taste

Optional: Red pepper flakes for added heat

Optional: Fresh cilantro or parsley, chopped for garnish

Prep the Zucchini: If you choose to grate the zucchini, place it in a clean kitchen towel and firmly squeeze out all excess moisture to prevent a watery dish. If using chopped zucchini, simply set it aside without squeezing.
