2 medium zucchinis

1 cup sweet corn (fresh, frozen, or canned)

1 cup black beans (rinsed and drained)

1 cup shredded cheddar cheese (or a dairy-free alternative)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon black pepper

¼ cup diced red bell pepper (optional)

¼ cup diced red onion (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s ready for baking the nacho cups.

    Prepare the Zucchini: Carefully cut each zucchini in half lengthwise. Using a spoon (a melon baller or small spoon works great), scoop out the seeds and some of the flesh to create a hollow center in each half.

      Make the Filling: In a large mixing bowl, combine the sweet corn, black beans, shredded cheddar cheese, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. If you choose to include the red bell pepper and red onion, add those as well. Mix everything thoroughly until well combined.

        Fill the Zucchini Cups: Take the filling mixture and spoon it generously into each hollowed zucchini half. Pack the filling tightly, allowing a slight mound to form on top for an appealing presentation.
