2 cups fresh watermelon, cut into 1-inch cubes

1 lb large shrimp, peeled and deveined

1 cup baby arugula or a blend of mixed greens

1/2 cucumber, thinly sliced into rounds

1/4 red onion, finely sliced

1 ripe avocado, diced

1/4 cup feta cheese, crumbled (optional)

2 tablespoons extra virgin olive oil

1 tablespoon honey

2 tablespoons freshly squeezed lime juice

Salt and freshly cracked pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Shrimp:

    - In a medium bowl, combine the shrimp with the olive oil, seasoning with an ample pinch of salt and freshly cracked pepper.

      - Heat a non-stick skillet over medium heat. Once hot, add the shrimp in a single layer, ensuring they aren't crowded in the pan.

        - Sauté for approximately 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove from heat and set aside to cool.

          Make the Dressing:

            - In a small bowl, whisk together the honey and freshly squeezed lime juice. Add a pinch of salt and a few cracks of pepper. Taste and adjust the sweetness or acidity as desired.

              Assemble the Salad Bowl:

                - In a large salad bowl, layer the watermelon cubes, baby arugula, cucumber slices, red onion, and diced avocado.

                  - Once the shrimp have cooled, add them to the salad bowl as well. Drizzle the prepared dressing over the entire mixture and gently toss everything together until all ingredients are well combined and evenly coated.
