Turkey Skewers with Lime Salsa

For the Turkey Skewers:

1.5 lbs ground turkey

1/2 cup panko breadcrumbs

1/4 cup fresh cilantro, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 large egg, lightly beaten

Skewers (if using wooden skewers, soak in water for 30 minutes)

For the Lime Salsa:

1 cup cherry tomatoes, quartered

1/2 red onion, finely chopped

1 jalapeño, seeded and finely diced (optional for heat)

Juice of 2 limes (about 1/4 cup fresh lime juice)

Zest of 1 lime

1 ripe avocado, diced

Salt and fresh ground pepper to taste

1/4 cup fresh cilantro, chopped

Prepare the Turkey Mixture: In a large mixing bowl, combine the ground turkey, panko breadcrumbs, chopped cilantro, minced garlic, smoked paprika, ground cumin, salt, black pepper, and the lightly beaten egg. Use your hands or a spoon to mix everything thoroughly until well combined and evenly mixed.

    Shape the Skewers: With wet hands, take a generous handful of the turkey mixture and mold it into elongated logs around the soaked skewers. Press firmly to ensure the mixture adheres well to the skewer, minimizing the risk of it falling apart while grilling.

      Make the Lime Salsa: In a medium-sized mixing bowl, combine the quartered cherry tomatoes, diced red onion, jalapeño (if using), fresh lime juice, lime zest, and diced avocado. Generously season with salt and pepper. Add the chopped cilantro last, and gently toss the mixture until all the ingredients are well coated together. Set aside to allow the flavors to meld.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan indoors, heat it over medium heat and lightly oil the surface to prevent sticking.
