1 large cucumber

8 slices of turkey breast (deli-style or roasted)

1 ripe avocado, mashed

1 cup fresh spinach leaves, washed and dried

1/4 cup feta cheese, crumbled

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh dill or parsley for garnish (optional)

Prepare the Cucumber: Begin by washing the cucumber under cold water to remove any dirt. Using a vegetable peeler or a mandoline slicer, cut the cucumber into long, thin strips about 1/8 inch thick. These thin strips should be flexible enough to roll without breaking. Once sliced, set the cucumber strips aside on a clean surface.

    Make the Avocado Spread: In a medium mixing bowl, combine the mashed avocado with the lemon juice, garlic powder, and a pinch of salt and pepper. Use a fork to blend the ingredients together until the mixture is smooth and evenly combined. Adjust the seasoning to taste.

      Assemble the Roll-Ups: Take a cucumber strip and lay it flat on a clean cutting board. Using a spatula or the back of a spoon, spread a thin, even layer of the avocado mixture over the cucumber, making sure to leave a small border around the edges for easier rolling.
