Sweet Potato and Sausage Breakfast Pizza

1 large sweet potato, peeled and thinly sliced

1 pound breakfast sausage (pork or turkey)

1 pre-made pizza crust (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

3 large eggs

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh spinach leaves, for topping

Fresh herbs (such as parsley or chives), for garnish

Preheat the Oven: Set your oven to 425°F (220°C) and, if you're using a pizza stone, place it in the oven to heat up as well.

    Prepare the Sweet Potato: In a mixing bowl, combine the thinly sliced sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until the sweet potatoes are well coated in the mixture.

      Sauté the Sausage: In a skillet over medium heat, cook the breakfast sausage, breaking it up into small crumbles as it cooks. Continue cooking until it's browned and fully cooked through. Remove from heat and set aside.

        Roast the Sweet Potatoes: Spread the seasoned sweet potato slices in a single layer on a baking sheet. Roast them in the preheated oven for about 15-20 minutes, or until they are tender and have developed a slight crispiness. Once done, remove from the oven and set aside.

          Assemble the Pizza: On your prepared pizza crust, drizzle the remaining tablespoon of olive oil evenly across the surface.
