1 teaspoon baking powder

1/4 teaspoon salt

1 cup diced mixed fruits (such as apples, bananas, or berries)

Optional toppings: chopped nuts, dried fruits, a drizzle of additional maple syrup

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly or lining it with parchment cups for easier removal of the breakfast cups later.

    Mix Wet Ingredients: In a medium-sized mixing bowl, combine the almond milk, pure maple syrup, creamy almond butter, and vanilla extract. Use a whisk to blend these ingredients together thoroughly until the mixture is smooth and well combined.

      Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir these dry ingredients together until they are evenly distributed.

        Combine Wet and Dry Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until fully combined, ensuring there are no dry patches. Gently fold in the diced mixed fruits, taking care not to crush them.

          Fill Muffin Tin: Using a spoon or ice cream scoop, evenly distribute the mixture into the prepared muffin cups, filling each cup about 3/4 full to allow room for rising.
