Summer Squash Pasta with Lemon Cream Sauce

8 oz spaghetti or your favorite pasta

2 medium summer squash, thinly sliced

1 small zucchini, thinly sliced

3 cloves garlic, minced

1 tablespoon extra virgin olive oil

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

Sea salt and freshly cracked black pepper, to taste

¼ cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Carefully add the spaghetti and cook according to package instructions until it is al dente (firm to the bite). Before draining, reserve ½ cup of the starchy pasta water to adjust sauce consistency later. Drain the pasta and set it aside in a colander.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the minced garlic and sauté for approximately 30 seconds, or until fragrant. Next, add the sliced summer squash and zucchini to the skillet. Sauté the vegetables for 5-7 minutes, stirring occasionally, until they become tender and start to caramelize. Season with a pinch of sea salt and freshly cracked black pepper to taste.

      Make the Lemon Cream Sauce: Lower the heat on the skillet to a gentle simmer. Pour in the heavy cream while stirring to integrate it with the sautéed vegetables. Then, add the lemon zest and freshly squeezed lemon juice. Allow the sauce to simmer for 2-3 minutes, allowing it to thicken slightly. If the sauce appears too thick, gradually add a splash of the reserved pasta water until the desired consistency is achieved.
