1 cup firm tofu, pressed and cubed

2 cups fresh strawberries, hulled and sliced

4 cups mixed greens (a blend of spinach, arugula, and baby kale)

1/4 cup sliced almonds, toasted for added crunch

1/4 cup feta cheese, crumbled (optional for a creamy touch)

2 tablespoons balsamic glaze for sweetness and tang

2 tablespoons extra virgin olive oil

1 tablespoon honey or maple syrup (use maple syrup for a vegan-friendly option)

1 teaspoon fresh lemon juice to brighten the flavors

Salt and pepper to taste

Fresh mint leaves for garnish and a hint of freshness

Prepare the Tofu: Heat 1 tablespoon of olive oil in a skillet over medium heat. Once the oil is shimmering, add the cubed tofu. Sauté the tofu for about 8-10 minutes, turning occasionally, until it is golden brown on all sides. Lightly season with sea salt and freshly cracked black pepper. Once cooked, transfer the tofu to a plate and let it cool slightly.

    Make the Dressing: In a small mixing bowl, combine the balsamic glaze, remaining tablespoon of olive oil, honey or maple syrup, and lemon juice. Whisk together until the ingredients are well blended. Season with a pinch of salt and pepper, then set aside to let the flavors meld.

      Assemble the Salad Base: In a large salad bowl or serving platter, lay the mixed greens as your base layer, spreading them evenly across the dish to create a fresh foundation.
