Ingredients

1 cup fresh figs, quartered

1/2 cup balsamic vinegar

2 tablespoons honey

4 ounces goat cheese, softened at room temperature

1 tablespoon olive oil (plus extra for brushing)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

4 slices rustic bread (sourdough or baguette)

Fresh arugula or mixed greens for garnish (optional)

Instructions

Prepare the Balsamic Reduction: In a small saucepan, combine the balsamic vinegar and honey. Place over medium heat and bring to a gentle simmer. Once simmering, reduce the heat to low and allow the mixture to simmer for approximately 10-15 minutes. Stir occasionally until it thickens enough to coat the back of a spoon. Once done, remove from heat and let it cool slightly.

Sauté the Figs: In a medium skillet, heat the olive oil over medium heat. Add the quartered figs to the skillet and sauté for about 2-3 minutes until they become soft and start to caramelize. Sprinkle the figs with salt, black pepper, and fresh thyme, then gently toss everything together. Remove from heat and set aside.

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the slices of rustic bread on a baking sheet. Brush both sides of each slice lightly with olive oil. Place in the preheated oven and toast for about 8-10 minutes or until they are golden brown and crisp.

Assemble the Toasts: Once the bread is toasted, spread a generous layer of the softened goat cheese on each slice. Top each toast with the sautéed figs and finish with a drizzle of the balsamic reduction for added flavor.

Finishing Touch: For a fresh touch, garnish with fresh arugula or mixed greens if desired. Serve immediately while the toasts are warm, allowing the vibrant flavors to shine.
