Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz egg noodles or rice noodles

2 tablespoons vegetable oil

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

3 cloves garlic, minced

1/4 cup Sriracha sauce (adjust according to desired spiciness)

3 tablespoons fresh lime juice

2 tablespoons soy sauce

1 tablespoon honey or agave syrup

1 teaspoon ground ginger

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Lime wedges (for serving)

Instructions

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Drain the noodles and set them aside.

Sauté the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Once cooked, remove the chicken from the skillet and keep it warm on a plate.

Sauté the Vegetables: In the same skillet, add the sliced red and yellow bell peppers along with the minced garlic. Sauté for about 3-4 minutes, stirring frequently, until the peppers are tender yet still crisp.

Prepare the Sauce: In a small mixing bowl, combine the Sriracha sauce, freshly squeezed lime juice, soy sauce, honey (or agave syrup), and ground ginger. Whisk these together until well blended. Adjust the amount of Sriracha to match your spice preference.

Combine Ingredients: Return the cooked chicken to the skillet with the sautéed vegetables. Pour the sauce over the chicken and vegetables, stirring everything together to ensure an even coating. Let the mixture simmer for about 2-3 minutes, allowing the flavors to meld.

Mix in the Noodles: Add the cooked noodles to the skillet, and gently toss everything together until the noodles are evenly coated with the sauce and heated through.

Serve: Remove the skillet from heat. Garnish the dish generously with chopped fresh cilantro. Serve the chicken noodle skillet in bowls, accompanied by lime wedges for an additional burst of flavor!
