Ingredients

1 lb (450g) andouille sausage, sliced into 1/4-inch rounds

1 cup long-grain white rice, thoroughly rinsed under cold water

1 medium onion, finely diced

1 green bell pepper, diced

3 cloves garlic, minced

2 cups low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, including the juice

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste for spice)

Salt and black pepper to taste

1 cup frozen mixed vegetables (peas, carrots, and corn)

2 tablespoons olive oil

1/4 cup fresh parsley, finely chopped (for garnish)

Optional: 1 cup shredded cheddar cheese for a cheesy topping

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

Sauté the Sausage: In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced andouille sausage and sauté for about 5-7 minutes, or until they are nicely browned and crispy. Once browned, remove the sausage from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the diced onion and green bell pepper. Sauté for about 3-4 minutes, allowing the vegetables to soften. Add the minced garlic and cook for an additional 1 minute, until it becomes fragrant.

Combine the Ingredients: Add the rinsed rice to the skillet, along with the cooked sausage. Pour in the chicken broth and diced tomatoes (with their juice). Sprinkle in the Cajun seasoning, smoked paprika, and cayenne pepper. Season with salt and black pepper to taste. Stir everything together thoroughly to ensure it’s well mixed.

Incorporate Frozen Vegetables: Gently fold in the frozen mixed vegetables, making sure they are evenly distributed throughout the mixture.

Bake in the Oven: Bring the mixture to a gentle boil over medium heat. Once boiling, cover the skillet with a lid or aluminum foil. Transfer it to the preheated oven and bake for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.

Add Optional Cheese Topping: If using, sprinkle the shredded cheddar cheese evenly over the top of the mixture during the last 5 minutes of cooking. Return to the oven uncovered until the cheese melts and turns bubbly and golden.

Garnish and Serve: After removing the bake from the oven, let it rest for a few minutes to cool slightly. Before serving, sprinkle the chopped fresh parsley on top for a burst of color and flavor.

Serving Suggestion: Serve your Spicy Cajun Sausage and Rice Bake with a side of crusty bread or a refreshing green salad for a hearty meal.
