Ingredients
  

For the Marinade:

1 lb boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust according to your heat preference)

1 tablespoon olive oil

Salt and black pepper to taste

Juice of 1 fresh lime

For the Sandwiches:

4 brioche buns (or your preferred sandwich bread)

1 cup shredded lettuce

1 large tomato, sliced into rounds

1/2 cup dill pickles, sliced

1/2 cup mayonnaise

1 tablespoon hot sauce (adjust to taste)

Optional: Sliced cheese (preferably pepper jack or cheddar)

Instructions
 

Marinate the Chicken:

    - In a medium mixing bowl, whisk together the Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, olive oil, lime juice, and a pinch of salt and pepper until well combined.

      - Add the chicken breasts to the marinade, ensuring they are completely covered. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, or ideally overnight, to allow the flavors to infuse.

        Cook the Chicken:

          - Preheat your grill or skillet over medium-high heat. Once hot, remove the chicken from the marinade and let any excess marinade drip off to avoid flare-ups.

            - Grill or pan-sear the chicken for approximately 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is beautifully browned and slightly charred. Remove from heat and let the chicken rest for about 5 minutes to retain its juices.

              Prepare the Cajun Sauce:

                - In a small bowl, combine mayonnaise and hot sauce. Stir well to blend, adjusting the hot sauce quantity based on your spice tolerance. Set this sauce aside for spreading onto the sandwiches.

                  Assemble the Sandwiches:

                    - Lightly toast the brioche buns on the grill or in a toaster until they are golden brown.

                      - Spread a generous layer of the Cajun mayo on the bottom half of each bun to infuse flavor in every bite.

                        - Place a piece of the cooked chicken on top of the mayo. Then, layer with a handful of shredded lettuce, a couple of slices of fresh tomato, pickles, and cheese if you desire.

                          - Cap the sandwich with the top half of the bun.
