Ingredients

1 lb ground turkey

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions (scallions)

2 cloves garlic, minced

1 large egg

2 tablespoons hot sauce (like Frank’s RedHot)

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil (for frying)

1/4 cup hot sauce (for tossing)

2 tablespoons unsalted butter, melted (for tossing)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy clean-up. Set aside.

Combine the Meatball Mixture: In a large mixing bowl, add the ground turkey, whole wheat breadcrumbs, grated Parmesan cheese, chopped green onions, minced garlic, egg, 2 tablespoons of hot sauce, onion powder, garlic powder, smoked paprika, black pepper, and salt. Using your hands or a spatula, mix the ingredients gently until fully combined, being careful not to overmix as this can make the meatballs tough.

Shape the Meatballs: With your hands, take portions of the mixture and roll them into meatballs that are about 1 to 1.5 inches in diameter. Transfer the formed meatballs to the prepared baking sheet, placing them evenly spaced apart.

Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and golden brown. To check doneness, ensure the internal temperature reaches 165°F (74°C).

Prepare the Buffalo Sauce: While the meatballs are in the oven, prepare the spicy buffalo sauce. In a small bowl, combine the remaining 1/4 cup of hot sauce with the melted unsalted butter, mixing well until fully blended.

Toss the Meatballs: Once the meatballs are finished baking, allow them to cool for a few minutes. Then, transfer them to a large bowl, pour the buffalo sauce over the meatballs, and gently toss them until they are well coated in the sauce.

Serve: Serve your spicy buffalo turkey meatballs hot, accompanied by fresh celery sticks and your choice of blue cheese or ranch dressing for dipping. Enjoy this fiery and flavorful dish!
