1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

2 cups brown rice

1 cup broccoli florets

1 cup bell peppers (red, yellow, or green), sliced

1 cup snap peas

4 green onions, chopped

1 tablespoon sesame oil

1 tablespoon olive oil

Salt and pepper, to taste

For the Teriyaki Sauce:

1/2 cup low-sodium soy sauce

1/4 cup honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon freshly grated ginger

2 cloves garlic, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds for garnish (optional)

Cook the Brown Rice:

    - Rinse the brown rice thoroughly under cold water to remove excess starch. In a medium saucepan, combine the rinsed rice with 4 cups of water. Bring the mixture to a vigorous boil over high heat.       Prepare the Teriyaki Sauce:
