8 oz elbow macaroni

1 lb smoked sausage, sliced (options: kielbasa, andouille, or your favorite variety)

2 cups fresh broccoli florets

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

2 cups milk (whole or reduced fat)

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Cook the Pasta and Broccoli: Begin by bringing a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 7-8 minutes. During the last 2 minutes of cooking, gently add the fresh broccoli florets to blanch them. Once cooked, drain the pasta and broccoli and set them aside.

    Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux and cook for about 1 minute until it's lightly golden. Gradually whisk in the milk, stirring continuously to ensure a smooth mixture without lumps. Continue to stir until the sauce begins to thicken, around 3-5 minutes.
