Slow Cooker Sweet Corn Chili

2 cups sweet corn kernels (fresh or frozen)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 jalapeño, seeds removed and finely diced (optional for heat)

2 cups vegetable broth

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Slices of avocado (for serving, optional)

Lime wedges (for serving, optional)

Instructions
 

Prepare the Vegetables: Start by dicing the onion, bell pepper, and jalapeño (if using for heat). Mince the garlic and set all the vegetables aside.

    Combine Ingredients in Slow Cooker: In a slow cooker, add the sweet corn, drained black beans, drained kidney beans, diced tomatoes (including their juice), diced onion, minced garlic, diced bell pepper, diced jalapeño, and vegetable broth.

      Season the Chili: Sprinkle the chili powder, ground cumin, smoked paprika, dried oregano, salt, and pepper over the mixture. Gently stir to combine all ingredients evenly.
