Slow Cooker Lentil Soup

1 cup dried green or brown lentils, thoroughly rinsed

1 medium onion, finely diced

1 can (14.5 oz) diced tomatoes, including their juices

4 cups vegetable broth (or chicken broth)

1 teaspoon ground cumin

1 teaspoon dried thyme

1 teaspoon paprika

1 bay leaf

Salt and freshly ground pepper, to taste

2 cups fresh spinach or kale, chopped

1 tablespoon olive oil

Juice of 1 fresh lemon, for serving

Fresh parsley, finely chopped, for garnish

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery and sauté them for 5-7 minutes, until the vegetables begin to soften. Then, stir in the minced garlic and cook for an additional minute until it's fragrant.

    Combine Ingredients in Slow Cooker: Transfer the sautéed veggies into a slow cooker. Add the rinsed lentils, diced tomatoes (with their juices), vegetable broth, ground cumin, dried thyme, paprika, and the bay leaf. Season with a pinch of salt and pepper. Stir everything together to ensure an even distribution of the ingredients.
