Slow Cooker Cheesy Chicken Chili

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) corn, drained

1 large onion, diced

3 cloves garlic, minced

1 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp freshly ground black pepper

1 cup chicken broth

8 oz cream cheese, cubed

1 cup shredded cheddar cheese (plus additional for topping)

Optional toppings: sour cream, sliced green onions, fresh cilantro, avocado slices

Instructions
 

Begin by placing the boneless, skinless chicken breasts at the bottom of your slow cooker, ensuring they are spread out evenly.

    Layer the drained black beans and kidney beans over the chicken, followed by the diced tomatoes (including their juices), corn, diced onion, and minced garlic.

      Next, sprinkle the chili powder, ground cumin, smoked paprika, salt, and black pepper evenly over the ingredients. Pour the chicken broth on top to help combine all the flavors.

        Cover the slow cooker with its lid and cook on the low setting for 6-7 hours or on high for 3-4 hours, or until the chicken is fully cooked and tender.

          Once the cooking time is finished, carefully remove the chicken from the slow cooker and shred it using two forks; it should pull apart easily.

            Return the shredded chicken to the slow cooker, then add the cubed cream cheese. Stir the mixture gently until the cream cheese is melted and evenly blended into the chili.
