Ingredients

2 to 3 lbs pork loin, trimmed of excess fat

2 medium apples, cored and sliced (preferably Granny Smith or Honeycrisp)

1 medium onion, thinly sliced

4 cloves garlic, minced

1 cup apple juice or cider

2 tablespoons brown sugar

1 tablespoon ground cinnamon

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon nutmeg

1 tablespoon olive oil

Fresh thyme sprigs for garnish (optional)

Instructions

Prepare the Pork Loin: Begin by patting the pork loin dry with paper towels to ensure that the seasonings adhere better. Rub olive oil all over the pork loin. Then, sprinkle it generously with salt, black pepper, ground cinnamon, dried thyme, and nutmeg, ensuring an even coating on all sides.

Sear the Meat (optional): In a large skillet heated over medium-high heat, sear the pork loin for about 3-4 minutes per side until it's beautifully browned. This step is optional but enhances the flavor profile of the dish.

Layer Ingredients in the Slow Cooker: Start by placing the sliced onions at the bottom of the slow cooker to create a flavorful base. Next, evenly distribute the sliced apples over the onions.

Add the Pork: Gently place the seasoned pork loin on top of the arranged apples and onions in the slow cooker, ensuring it fits snugly.

Create the Sauce: In a separate bowl, whisk together the apple juice or cider, brown sugar, and minced garlic until well combined. Pour this mixture over the pork, allowing it to drizzle down and cover the meat while seeping into the fruit below.

Cook: Cover the slow cooker with its lid and set it to low heat. Allow the pork loin to cook for 6 to 8 hours or on high for 3 to 4 hours, until the meat becomes tender and can be easily shredded with a fork.

Serve: Once cooking is complete, carefully remove the pork from the slow cooker and set it aside to rest for about 10 minutes. Meanwhile, stir the apples and onions into the sauce to meld the flavors together.

Slice and Enjoy: Slice the pork loin into thick, generous portions. Serve warm, generously topped with the sautéed apple and onion mixture. Drizzle with the flavorful apple-cinnamon sauce from the slow cooker and, if desired, garnish with fresh thyme sprigs for an added touch of elegance.
