2 medium zucchinis, grated

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup packed brown sugar

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/4 cup chopped walnuts (optional)

2 tablespoons vegetable oil

1 teaspoon vanilla extract

4 large flour tortillas

Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Transfer the grated zucchini to the center of a clean kitchen towel and twist the towel to squeeze out any excess moisture. Set the drained zucchini aside to prevent sogginess.

    Make the Cookie Dough: In a large mixing bowl, combine the grated zucchini, all-purpose flour, rolled oats, brown sugar, baking soda, baking powder, ground cinnamon, and salt. Use a whisk or spatula to mix the dry ingredients thoroughly until well combined.

      Incorporate Wet Ingredients: In a separate bowl, whisk together the vegetable oil and vanilla extract. If using, gently fold in the chocolate chips and chopped walnuts. Pour this wet mixture into the bowl with the dry ingredients and stir until everything is well blended and no dry flour remains.

        Heat the Pan: Preheat a non-stick skillet or frying pan over medium heat for about 2-3 minutes.

          Assemble the Quesadillas: Take a tortilla and place it in the preheated skillet. Using a spoon or spatula, spread about 1/4 of the cookie dough mixture evenly over one half of the tortilla. Carefully fold the other half over the filled side to create a half-moon shape.

            Cook the Quesadilla: Cook the quesadilla for approximately 3-4 minutes, or until the underside is golden brown and crisp. Using a spatula, flip the quesadilla and cook for an additional 3-4 minutes until the other side is also golden and has a nice crunch.

              Repeat Cooking: Remove the cooked quesadilla from the skillet and place it on a plate. Continue the process with the remaining tortillas and cookie dough to create more quesadillas.
