For the Turkey:

12-14 lb whole turkey, fully thawed

1/2 cup unsalted butter, softened (allow to sit at room temperature)

2 tablespoons olive oil

2 tablespoons kosher salt

1 tablespoon freshly ground black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons dried thyme

2 teaspoons dried rosemary

2 teaspoons dried sage

1 lemon, quartered

1 onion, quartered

4 cups low-sodium chicken broth

Fresh herbs (thyme, rosemary, and sage) for stuffing the cavity

For the Pan Gravy:

1/2 cup all-purpose flour

2 cups turkey drippings (strained)

2 cups chicken broth (adjust as needed for consistency)

Salt and freshly ground black pepper to taste

Prep the Turkey: Begin by preheating your oven to 325°F (160°C). Remove the turkey from the fridge and allow it to sit at room temperature for about 1 hour. This helps ensure even cooking. Take out the giblets and neck from the cavity, and use paper towels to gently pat the turkey dry, making sure to remove any excess moisture.

    Make the Herb Butter: In a medium mixing bowl, combine the softened butter, olive oil, kosher salt, black pepper, garlic powder, onion powder, dried thyme, dried rosemary, and dried sage. Mix thoroughly until all ingredients are well integrated, forming a flavorful herb butter.

      Season the Turkey: Carefully separate the skin from the turkey breast using your fingers, being cautious not to tear it. Spread half of the prepared herb butter mixture directly onto the turkey breast beneath the skin, ensuring it’s evenly distributed. Next, rub the remaining herb butter all over the outside of the turkey for a crispy, flavorful skin.

        Stuff and Arrange: Stuff the cavity of the turkey with the quartered lemon, onion, and a generous handful of fresh herbs (thyme, rosemary, and sage). Tie the turkey legs together with kitchen twine to maintain its shape, and tuck the wing tips under the body of the turkey to promote even cooking.

          Roasting: Place the turkey breast side up on a roasting rack set in a large roasting pan. Pour 2 cups of chicken broth into the bottom of the pan to keep the turkey moist during roasting. Roast in the preheated oven, basting with the pan juices every 30 minutes. Cook until the internal temperature in the thickest part of the breast reaches 165°F, which will take approximately 3-4 hours or about 13 minutes per pound.

            Rest the Turkey: Once the turkey is fully cooked, carefully remove it from the oven. Tent it loosely with aluminum foil and allow it to rest for at least 30 minutes before carving. Resting will help the juices redistribute throughout the meat, ensuring a juicy turkey.

              Make the Gravy: While the turkey rests, skim off excess fat from the drippings in the roasting pan. Whisk in the flour and cook over medium heat for 2-3 minutes until it turns golden brown. Gradually pour in the strained turkey drippings and chicken broth, whisking continuously to avoid lumps. Bring the mixture to a boil and let it simmer until thickened. Season the gravy with salt and freshly ground black pepper to taste.

                Serve: Carve the rested turkey into slices and arrange it on a serving platter. Serve alongside the freshly made pan gravy, and garnish with additional fresh herbs for an elegant touch.
