Ingredients

1 cup pumpkin puree (canned or homemade)

6 large eggs

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 tablespoon olive oil

Fresh sage leaves for garnish

Instructions

Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

Sauté Aromatics: In a large, oven-proof skillet, warm the olive oil over medium heat. Add the finely chopped onion, sautéing until it becomes translucent and soft, around 5 minutes. Stir in the minced garlic and chopped fresh sage, cooking for an additional 1-2 minutes until the garlic is fragrant and slightly golden.

Prepare the Egg Mixture: In a spacious mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until the mixture is smooth and airy. Gently fold in the pumpkin puree and grated Parmesan cheese until fully blended.

Combine Ingredients: Carefully pour the egg mixture into the skillet with the sautéed onions and garlic. Use a spatula to gently stir, ensuring the onions and sage are evenly distributed throughout the mixture.

Cook on Stovetop: Allow the frittata to cook on the stovetop for about 3-4 minutes, or until the edges begin to set while the center remains slightly loose.

Bake in Oven: Transfer the skillet to your preheated oven. Bake for 15-20 minutes until the frittata is puffed, golden brown on top, and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, let the frittata cool in the skillet for a few minutes before slicing. For presentation, garnish with fresh sage leaves. Serve warm or at room temperature for the best flavor experience. Enjoy!
