Ingredients

6 large eggs

1 cup diced cooked ham

1 cup shredded cheddar cheese

1/2 cup milk

1/2 cup diced bell peppers (any color you prefer)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon freshly ground black pepper

1/4 teaspoon salt

1 tablespoon olive oil (for greasing the muffin tin)

Optional: freshly chopped herbs (such as parsley or chives) for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it is hot and ready for baking.

Prepare the Muffin Tin: Lightly grease a 12-cup muffin tin with olive oil, ensuring that each cup is well-coated to prevent sticking.

Create the Egg Mixture: In a large mixing bowl, crack the eggs and add the milk. Whisk together vigorously until the mixture is smooth and all ingredients are fully incorporated.

Combine Additional Ingredients: Add in the diced ham, shredded cheddar cheese, diced bell peppers, chopped green onions, garlic powder, black pepper, and salt. Stir gently until everything is evenly mixed and well distributed throughout the egg base.

Fill the Muffin Cups: Carefully pour the egg and ingredient mixture into each muffin cup, filling them about three-quarters full. This allows the mixture to rise without overflowing during baking.

Bake: Transfer the muffin tin to the preheated oven and bake for 18-20 minutes. The breakfast cups are done when the egg is set and the tops are lightly golden.

Cool and Release: Once baked, remove the muffin tin from the oven and let it cool for about 5 minutes. Using a small spatula or a knife, gently lift each breakfast cup out from the tin, taking care not to break them.

Garnish and Serve: For an added touch of freshness, sprinkle chopped herbs over the top of the breakfast cups before serving. These delightful and portable treats are best enjoyed warm or at room temperature!
