Savory Chicken and Broccoli Rice Casserole

2 cups cooked white or brown rice

2 cups cooked, shredded chicken (rotisserie chicken is an excellent option)

2 cups broccoli florets (fresh or frozen)

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

1 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley for garnish (optional)

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare Broccoli: For fresh broccoli, steam the florets for approximately 3-4 minutes until they are tender. If using frozen broccoli, follow the microwave instructions on the package. Once cooked, allow to cool slightly and chop into smaller bite-sized pieces.

      Mix Base Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, and chopped broccoli, ensuring an even distribution of ingredients.

        Create Sauce: In a separate bowl, whisk together the cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Mix until the ingredients are smooth and well combined.

          Combine Mixtures: Pour the creamy sauce over the rice, chicken, and broccoli mixture. Stir in 1 cup of shredded cheddar cheese and blend everything together until all ingredients are coated with the sauce.
