1 tablespoon active dry yeast

1 teaspoon salt

3/4 cup warm milk (approximately 110°F or 43°C)

2 tablespoons unsalted butter, melted

1 large egg

1 medium onion, finely chopped

1 cup shredded cheese (cheddar or a blend of your choice)

1 tablespoon olive oil

1 teaspoon dried thyme or oregano (optional)

1 egg (for egg wash)

Sesame or poppy seeds (for topping, optional)

Activate the Yeast: In a small bowl, mix the warm milk, sugar, and yeast together. Allow this mixture to sit for 5-10 minutes until it becomes frothy, indicating that the yeast is active.

    Form the Dough: In a large mixing bowl, whisk together the flour, salt, and dried herbs (if using). Pour in the melted butter, the activated yeast mixture, and the egg. Stir everything together until a cohesive dough forms. Transfer the dough to a lightly floured surface and knead for 7-10 minutes, until it becomes smooth and elastic.

      First Rise: Place the kneaded dough into a lightly greased bowl. Cover the bowl with a clean kitchen towel and set it in a warm environment to rise until it has doubled in size, typically around 1 hour.

        Cook the Onion Filling: While the dough is rising, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5-7 minutes, or until the onion is translucent. Remove from heat and allow to cool slightly. Once cooled, stir in the shredded cheese until well combined.

          Shape the Rolls: After the dough has risen, gently punch it down to release air. Roll the dough out on a floured surface into a rectangle about 1/4-inch thick. Spread the cheese and onion filling evenly over the surface of the dough.
