Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

½ teaspoon freshly ground black pepper

½ cup unsalted butter, chilled and cut into small cubes

1 cup sharp cheddar cheese, grated

1 small onion, finely chopped

2 tablespoons fresh chives, chopped (optional for added flavor)

¾ cup whole milk

1 large egg, lightly beaten for egg wash

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and freshly ground black pepper until well mixed.

Incorporate the Butter: Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized pieces of butter.

Add Cheese and Onions: Gently fold in the grated sharp cheddar cheese and finely chopped onion, along with the fresh chives if desired, ensuring they are evenly distributed throughout the mixture.

Form the Dough: Pour the whole milk into the mixture and stir gently with a wooden spoon until the dough begins to come together. Take care not to overmix; the dough should be slightly sticky yet manageable.

Shape the Scones: Place the dough onto a lightly floured surface. Knead it gently just a couple of times, then shape it into a round disc approximately 1-inch thick. Cut the disc into 8 equal wedges, similar to slicing a pizza.

Prepare for Baking: Arrange the scone wedges on the prepared baking sheet, spacing them apart slightly. In a small bowl, beat the egg and brush the tops of the scones with the egg wash for a beautiful golden finish.

Bake the Scones: Place the baking sheet in the preheated oven and bake for 18-20 minutes, or until the scones are golden brown and have risen nicely.

Cool and Serve: Once baked, remove the scones from the oven and let them cool for a few minutes on a wire rack. Serve warm, either plain or with a pat of butter for extra richness!
