The marinating process is a crucial step in preparing your Zesty Salmon Tacos. By allowing the salmon to absorb the flavors of your marinade, you enhance its taste and texture. Ideally, you should marinate the salmon for 30 minutes to 1 hour. This duration is sufficient for the fish to soak up the zesty notes without overpowering its natural flavor.

For the Salmon:

1 lb (450g) fresh salmon fillet, skin removed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

Juice of 1 lime

For the Lime Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, grated

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon honey

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Sliced avocado (optional)

Lime wedges for serving

Hot sauce (optional, for extra heat)

Instructions

Prepare the Salmon:

    - In a medium bowl, whisk together the olive oil, smoked paprika, garlic powder, ground cumin, salt, pepper, and lime juice until well combined.

      - Add the salmon fillet to the marinade, ensuring it is thoroughly coated. Cover the bowl and let the salmon marinate for at least 15-20 minutes, allowing the flavors to infuse while you prepare the slaw.

        Make the Lime Slaw:

          - In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrot, and chopped cilantro, mixing gently to combine.

            - In a separate small bowl, whisk together the lime juice, mayonnaise (or Greek yogurt), honey, salt, and pepper until smooth.

              - Pour the dressing over the cabbage mixture and toss well to ensure everything is evenly coated. Set the slaw aside to allow the flavors to meld.

                Cook the Salmon:

                  - Preheat your grill or a skillet over medium-high heat.

                    - Once hot, carefully remove the salmon from the marinade, letting any excess drip off, and place it directly onto the grill or skillet.

                      - Cook the salmon for about 4-5 minutes on each side, or until it flakes easily with a fork. Cooking time may vary depending on the thickness of your fillet, so keep an eye on it.

                        - After cooking, remove the salmon from the heat and allow it to cool for a minute. Flake the salmon into bite-sized pieces with a fork.

                          Warm the Tortillas:

                            - In a dry skillet over low heat, warm each tortilla one at a time for about 30 seconds on each side, just until they're pliable and warmed through.

                              Assemble the Tacos:

                                - On each tortilla, place a generous amount of flaked salmon.

                                  - Top with a handful of lime slaw and add sliced avocado if desired.

                                    - Finish with a squeeze of fresh lime juice and a drizzle of hot sauce for an extra kick.

                                      Serve:

                                        - Arrange the assembled tacos on a serving platter and serve with lime wedges on the side for added zest. Enjoy your vibrant and refreshing salmon tacos!
