Roasted Tomato and Mozzarella Caprese Pasta

1 pound cherry tomatoes, halved

10 ounces pasta (such as fusilli or penne)

8 ounces fresh mozzarella balls, halved

1/4 cup extra virgin olive oil, divided

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and freshly ground black pepper, to taste

1/2 cup fresh basil leaves, chopped

1 tablespoon balsamic glaze (optional, for drizzling)

Grated Parmesan cheese, for serving

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to prepare for roasting the tomatoes.

    Roast the Tomatoes: On a large baking sheet, combine the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, red pepper flakes (if using), and a generous pinch of salt and black pepper. Toss everything well to coat the tomatoes. Spread the tomatoes out in a single layer and roast in the preheated oven for 20-25 minutes, or until they are caramelized and slightly shriveled, enhancing their natural sweetness.

      Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a vigorous boil. Add the pasta and cook according to the package instructions until you achieve an al dente texture. Once cooked, drain the pasta but be sure to reserve 1 cup of the pasta cooking water for later use.

        Combine Ingredients: In a large mixing bowl, toss the cooked pasta together with the roasted tomatoes (including all their delicious juices). Add the halved mozzarella balls and the remaining 2 tablespoons of olive oil. If you find the mixture too dry, gradually incorporate reserved pasta water a little at a time until you achieve your desired creamy consistency.
