3 medium sweet potatoes, peeled and sliced into thin rounds

3 tablespoons olive oil

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 jalapeño, thinly sliced (optional for heat)

1 ½ cups shredded cheese (cheddar, Monterey Jack, or your favorite vegan cheese)

¼ cup sliced green onions

½ cup fresh cilantro, chopped

Avocado crema or guacamole, for topping

Lime wedges, for serving

Preheat and Prepare the Sweet Potatoes:
