4 whole wheat tortillas

1 cup shredded cheese (choose from cheddar or a Mexican blend for variety)

1 cup mixed vegetables (finely chopped bell peppers, fresh spinach, and zucchini)

1/2 cup black beans, drained and rinsed thoroughly

1/2 teaspoon taco seasoning (adjust to taste)

1 tablespoon olive oil (for brushing)

Sour cream or yogurt, for dipping (optional)

Salsa, for dipping (optional)

Prep the Veggies: In a medium bowl, combine the finely chopped bell peppers, fresh spinach, and zucchini. Add the drained black beans. Sprinkle the taco seasoning over the top and mix all the ingredients together until the veggies are well-coated in the seasoning.

    Assemble the Quesadillas: On a clean working surface, lay out one tortilla. Spread approximately 1/4 cup of shredded cheese evenly over one half of the tortilla.
