Ingredients

1 pound large shrimp, peeled and deveined

1 cup jasmine rice

2 cups water or low-sodium chicken broth

1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Optional: steamed broccoli or snow peas for added vegetables

Instructions

Cook the Rice:

In a medium saucepan, combine 1 cup of jasmine rice with 2 cups of water (or chicken broth). Bring the mixture to a vigorous boil. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for approximately 15 minutes, or until all the liquid has been absorbed. Remove from heat and let it sit covered for an additional 5 minutes to allow the rice to become fluffy.

      Prepare the Honey Garlic Sauce:

While the rice is cooking, in a small mixing bowl, whisk together 1/4 cup of honey, 4 cloves of minced garlic, 2 tablespoons of soy sauce (or tamari), 1 tablespoon of sesame oil, and 1/2 teaspoon of red pepper flakes. Mix until the ingredients are well combined and set this sauce aside for later use.

          Sauté the Shrimp:

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the peeled and deveined shrimp with salt and pepper. Add the shrimp to the skillet in a single layer, allowing space between each piece. Cook for about 2-3 minutes on one side until they start to turn pink.

              Add the Sauce:

Carefully pour the prepared honey garlic sauce over the shrimp in the skillet. Continue cooking for an additional 2-3 minutes, stirring gently. Ensure that all the shrimp are fully cooked and evenly coated with the luscious sauce.

                  Assemble the Bowl:

Fluff the cooked jasmine rice with a fork to separate the grains. Divide the rice evenly into four serving bowls. Generously top each bowl with the honey garlic shrimp. If desired, include a side of steamed broccoli or snow peas for added color and nutrition, enhancing the overall presentation.

                      Garnish & Serve:

Finish by sprinkling sliced green onions and sesame seeds over each bowl for a burst of flavor and texture. Serve your Sweet & Savory Honey Garlic Shrimp Rice Bowl immediately while it's hot. Enjoy your deliciously quick meal!
