8 small corn tortillas

1 cup shredded lettuce

1 cup shredded cheese (cheddar or a Mexican blend)

1 ripe avocado, sliced

1 lime, cut into wedges

For the Sweet Corn Salsa:

1 cup fresh or canned sweet corn (drained if using canned)

1 small red bell pepper, diced

1 small jalapeño, seeds removed and finely chopped

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

2 tablespoons lime juice

Drizzle with lime juice, and season with salt and pepper according to your taste. Mix everything together well and set aside to let the flavors develop.

    Cook the Ground Beef: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing for about 2-3 minutes until they become softened and fragrant.

      Add Spices and Beef: Raise the heat to medium-high, then add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it is browned and fully cooked, roughly 5-7 minutes.
