2 medium zucchinis

2 large eggs

    Prepare the Zucchini: Rinse the zucchinis well under running water, then pat them dry with a paper towel. Trim off the ends and slice them into sticks about 1/4 inch thick, similar to the size and shape of French fries.

      Set Up Your Breading Station: In a shallow bowl, whisk together the eggs and the olive oil until they are well combined and frothy. In a separate bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix thoroughly to distribute the seasonings evenly.
