1 cup black beans (canned; ensure they are drained and rinsed well)

1 red bell pepper, diced into small cubes

1 medium zucchini, diced into small cubes

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon garlic powder

Salt and black pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

½ cup diced tomatoes

½ cup diced avocado

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Prepare the Veggies: In a large mixing bowl, combine the corn, black beans, diced red bell pepper, and diced zucchini. Sprinkle in the chili powder, cumin, garlic powder, salt, and pepper. Toss all the ingredients together thoroughly until everything is well incorporated.

    Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for 3 to 5 minutes; this ensures even cooking for the veggies.

      Air Fry the Veggies: Lightly coat the air fryer basket with cooking spray or brush a small amount of olive oil onto the surface. Add the veggie mixture to the basket in a single, even layer to allow even crisping. Air fry for about 10 to 12 minutes, giving the basket a good shake halfway through the cooking time to promote even browning; the veggies should be tender and slightly crispy.
