1 teaspoon onion powder

1/2 teaspoon paprika (or chili powder for those who prefer a kick)

Prepare the Veggies: Begin by grating the zucchini and carrots using a box grater or a food processor. To ensure your fritters remain crispy, place the grated zucchini in a clean kitchen towel or paper towels and squeeze out any excess moisture.

    Mix Ingredients: In a large mixing bowl, combine the grated zucchini, grated carrots, finely chopped bell pepper, and onion. To the veggie mixture, add the chickpea flour, all-purpose flour, egg (or flax egg), garlic powder, onion powder, paprika, salt, and black pepper. Stir the mixture thoroughly until all ingredients are well combined and evenly distributed.

      Form Fritters: With clean hands, scoop about a tablespoon of the mixture and shape it into small patties. Flatten the patties slightly to promote even cooking. Continue this process until all the mixture is shaped into fritters.
