Ingredients

4 medium bell peppers (any color)

1 pound ground beef (or ground turkey for a lighter option)

1 packet taco seasoning (approximately 1 ounce)

1 cup black beans (canned, drained and rinsed)

1 cup corn (canned or frozen)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar or a Mexican blend)

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish, optional)

Sour cream, avocado, or your favorite toppings (optional)

Instructions

Prepare the Bell Peppers: Start by cutting the tops off the bell peppers and carefully removing the seeds and membranes. Rinse the peppers thoroughly under cold water to clean them and then set aside to drain.

Cook the Meat: In a large skillet heated to medium heat, add the olive oil. Once hot, add the ground beef (or turkey) and cook until it browns, breaking it apart with a spatula. This should take about 5-7 minutes; make sure the meat is fully cooked.

Season the Mixture: After the meat is browned, carefully drain any excess fat from the skillet. Then, mix in the taco seasoning, followed by the black beans, corn, and diced tomatoes. Cook this mixture for an additional 5 minutes, stirring well to ensure everything is heated through and evenly combined.

Stuff the Peppers: Using a spoon, carefully fill each bell pepper with the taco meat mixture. Pack the filling gently but firmly. Once filled, generously sprinkle shredded cheese on top of each stuffed pepper.

Air Fry the Peppers: Preheat your air fryer to 375°F (190°C). Once preheated, place the stuffed peppers in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to work in batches. Air fry the peppers for about 12-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Garnish and Serve: Once the cooking time is up, carefully remove the stuffed peppers from the air fryer using tongs. Garnish each pepper with freshly chopped cilantro, and serve with optional toppings like sour cream or avocado.
