Ingredients

12 oz fettuccine pasta

1 cup pumpkin puree (either canned or freshly made)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1/4 cup unsalted butter

2 cloves garlic, minced

1 tablespoon fresh sage, finely chopped (or substitute with 1 teaspoon dried sage)

1/2 teaspoon ground nutmeg

Salt and freshly cracked black pepper, to taste

Optional: toasted pumpkin seeds, for garnish

Instructions

Cook the Pasta:

    - In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente, usually about 8-10 minutes. Before draining, reserve 1 cup of the pasta water and then drain the pasta. Set aside.

      Prepare the Alfredo Sauce:

        - In a large skillet, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for approximately 1 minute, stirring gently until the garlic is fragrant but not browned.

          Add Pumpkin and Cream:

            - Lower the heat slightly and stir in the pumpkin puree along with the heavy cream. Mix thoroughly until the two are well blended. Allow the mixture to come to a gentle simmer, stirring occasionally.

              Season the Sauce:

                - Sprinkle in the chopped fresh sage, ground nutmeg, and add salt and pepper to taste. Mix well and let the sauce simmer for about 5-7 minutes, allowing it to thicken and the flavors to meld together.

                  Incorporate the Cheese:

                    - Gradually stir in the freshly grated Parmesan cheese, mixing until the cheese is completely melted and the sauce takes on a creamy texture. If the sauce becomes too thick, slowly incorporate the reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.

                      Combine Pasta and Sauce:

                        - Gently toss the cooked fettuccine in the creamy pumpkin sauce, ensuring each strand is well coated. Taste and adjust the seasoning with additional salt and black pepper if necessary.

                          Serve:

                            - Plate the pasta in generous portions and garnish with optional toasted pumpkin seeds for added crunch. For an extra touch, sprinkle with additional fresh sage and Parmesan cheese. Enjoy your delightful and comforting dish!
