Ingredients

2 ripe pears, peeled and diced into small cubes

1 cup fresh raspberries (or use frozen raspberries that have been thawed)

2 cups Greek yogurt (choose either plain or vanilla flavor)

2 tablespoons honey (feel free to adjust according to your sweetness preference)

1 teaspoon vanilla extract

1 cup granola (your choice, ideally one that includes nuts for added texture)

Fresh mint leaves for garnish

Instructions

Prepare the Pears: Begin by peeling the pears and dicing them into small cubes. To enhance their natural sweetness and flavor, you can toss the diced pears with a little bit of honey and the vanilla extract. Set the prepared pears aside while you prepare the yogurt mixture.

Make the Yogurt Mixture: In a separate bowl, blend the Greek yogurt with 1 tablespoon of honey and the teaspoon of vanilla extract. Stir the mixture well until it becomes smooth and creamy. Taste the yogurt and adjust the sweetness, adding more honey if desired.

Layer the Parfaits: Grab your serving glasses or bowls and begin the layering process. Pour approximately 1/4 cup of the yogurt mixture into the bottom of each glass.

Add Pears: Next, add a few spoonfuls of the diced pears on top of the yogurt layer. Aim for about 2 tablespoons of pears per glass.

Incorporate Raspberries: Following the pears, layer around 1/4 cup of fresh raspberries atop the pears. You can gently press them down to secure the layer.

Sprinkle Granola: For a delightful crunch, add a layer of granola (about 2-3 tablespoons) on top of the raspberries. This will create a nice texture contrast.

Repeat the Layers: Continue the layering process with the remaining ingredients: another layer of yogurt, followed by pears, raspberries, and granola. Finish the last layer with a generous scoop of yogurt and a final sprinkle of granola on top for presentation.

Garnish Creatively: To enhance the visual appeal, garnish each parfait with whole raspberries, a few cubes of pear, and a sprig of fresh mint leaves. This will add a pop of color and freshness.

Serve & Enjoy: You can serve the parfaits immediately for the best texture, or refrigerate them for up to an hour to allow the flavors to meld slightly (note that the granola will remain crunchy).
