Ingredients

1 French baguette, sliced into 1/2 inch rounds

2 large ripe peaches, diced

1 cup fresh ricotta cheese

2 tablespoons honey

1 tablespoon fresh lemon juice

1 tablespoon fresh basil, finely chopped

Salt and pepper, to taste

Olive oil, for drizzling

Balsamic glaze, for drizzling (optional)

Instructions

Prepare the Baguette:

Preheat your oven to 400°F (200°C). Lay the sliced baguette rounds out on a baking sheet. Lightly drizzle olive oil over each slice to enhance the toasting process. Place in the oven and bake for approximately 8-10 minutes, or until the bread is a lovely golden brown and crispy to the touch.

      Make the Peach Mixture:

In a mixing bowl, combine the diced peaches, honey, fresh lemon juice, chopped basil, and a sprinkling of salt and pepper. Gently toss the ingredients together, ensuring the peaches are evenly coated. Let the mixture sit for about 10 minutes to allow the flavors to develop and blend beautifully.

          Assemble the Bruschetta:

Once the baguette slices are toasted to perfection, remove them from the oven and allow them to cool for just a minute. Generously spread a dollop of creamy ricotta cheese onto each toasted baguette slice.

              Top with Peaches:

Carefully spoon the peach mixture over the ricotta-covered baguette slices. Aim for an even distribution of both peaches and juices so that each bite is bursting with flavor.

                  Finish with Drizzles:

For an extra layer of flavor, drizzle a bit of balsamic glaze over the assembled bruschetta if desired, followed by a light drizzle of olive oil to create a rich finish.

                      Serve:

Arrange your delightful bruschetta artfully on a serving platter. For a touch of elegance, consider garnishing with additional fresh basil leaves. Serve immediately and savor the harmonious balance of sweet, creamy, and savory flavors in every bite!
