One-Pan Cheesy Comfort Chili Mac

Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped (any color)

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (28 oz) crushed tomatoes

2 cups beef broth (or chicken broth)

1 tbsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

2 cups elbow macaroni

2 cups shredded cheddar cheese

1/2 cup sour cream (optional, for topping)

Fresh cilantro or green onions, chopped (for garnish)

Instructions
 

In a large skillet or Dutch oven over medium heat, add the ground beef (or turkey). Cook until browned, using a spoon to break it up, around 5-7 minutes. If needed, drain any excess fat.

    Incorporate the chopped onion, minced garlic, and bell pepper into the skillet. Sauté for approximately 3-4 minutes, until the vegetables are tender.

      Add in the kidney beans, black beans, crushed tomatoes, and beef broth.

        Sprinkle the chili powder, cumin, paprika, salt, and pepper, mixing everything well until combined.

          Bring the mixture to a soft boil, then add the elbow macaroni. Stir everything together, cover with a lid, and lower the heat to simmer. Cook for about 15-20 minutes, stirring occasionally, until the pasta is al dente and has absorbed some of the liquid.

            After the pasta reaches the desired tenderness, take the skillet off the heat. Stir in 1 1/2 cups of the shredded cheddar cheese until it’s melted and creamy.

              Dish out the chili mac warm in bowls, garnished with the remaining cheddar cheese, a spoonful of sour cream if desired, and a sprinkle of fresh cilantro or green onions.
