Ingredients

2 cups cooked chicken, shredded or diced

4 cups broccoli florets (fresh or frozen)

1 cup uncooked quinoa (alternatively, use rice for convenience)

3 cups chicken broth

1 cup sharp cheddar cheese, grated

1 cup cream of mushroom soup (or your homemade version)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to your taste)

½ cup breadcrumbs (optional, for a crunchy topping)

2 tablespoons olive oil or butter

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Set your oven to 375°F (190°C) to preheat.

Sauté the Broccoli: In a large oven-safe skillet or casserole dish, heat the olive oil or butter over medium heat. Add the broccoli florets and sauté them for about 3-4 minutes until they're vibrant green and slightly tender.

Mix the Ingredients: In the same pan, add the shredded chicken, uncooked quinoa (or rice), chicken broth, cream of mushroom soup, garlic powder, onion powder, paprika, black pepper, and salt. Stir well to combine all the ingredients evenly.

Incorporate Cheese: Carefully fold in ¾ cup of the grated cheddar cheese into the mixture until it melts seamlessly.

Bake the Casserole: Place the skillet in the preheated oven and bake uncovered for 25-30 minutes. The quinoa should be fluffy and absorb most of the broth; if using rice, make sure it's tender and the liquid is fully absorbed.

Add Cheesy Topping: After the initial baking, take the pan out of the oven and sprinkle the remaining ¼ cup of cheddar cheese over the top. If you like a crispy texture, add breadcrumbs on top as well. Return the skillet to the oven for an additional 5-10 minutes, until the cheese is bubbly and golden, and the breadcrumbs are toasted.

Garnish and Serve: Once it’s out of the oven, allow it to cool for a few minutes. Before serving, sprinkle with chopped fresh parsley for a pop of color and flavor. Enjoy your delicious and comforting One-Pan Cheesy Chicken and Broccoli Casserole!
