1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup almond flour

1/3 cup melted coconut oil

2 tablespoons maple syrup

For the Mango Layer:

2 large ripe mangoes, peeled and diced (approximately 2 cups)

1/4 cup chilled coconut cream

1/3 cup honey or agave syrup

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

1 tablespoon gelatin or agar-agar (for a vegan option, use agar-agar)

For the Top Layer (Optional):

1/2 cup whipped coconut cream (for topping)

Fresh mint leaves for garnish

Instructions
 

Prepare the Base:

    - In a medium mixing bowl, combine the graham cracker crumbs, shredded coconut, and almond flour. Mix them well for an even consistency.

      - Add the melted coconut oil and maple syrup to the dry ingredients. Mix until everything is well combined and crumbly.

        - Transfer the mixture into a lined 8x8-inch baking dish. Use a flat-bottomed glass or your hands to press it down firmly and evenly to form the base. Place it in the refrigerator while you prepare the mango layer.

          Make the Mango Layer:

            - In a blender or food processor, combine the diced mangoes, chilled coconut cream, honey (or agave syrup), fresh lime juice, vanilla extract, and the gelatin (or agar-agar).

              - Blend until the mixture is smooth and creamy. If using gelatin, ensure it is dissolved first in a small amount of warm water (if it’s not instant).

                Combine Layers:

                  - Remove the base from the refrigerator. Pour the mango mixture over it, using a spatula to spread it evenly across the base.

                    - Gently tap the baking dish on your countertop to eliminate any air bubbles. Cover and refrigerate for at least 4 hours, or until the mango layer is set firmly.

                      Serve:
