No-Bake Lemon Popsicles

Ingredients
  

1 cup fresh lemon juice (approximately 4-6 medium-sized lemons)

1 cup coconut milk (either canned or from a carton)

1/2 cup honey or maple syrup (adjust according to your desired sweetness)

1 teaspoon pure vanilla extract

1 tablespoon finely grated lemon zest (for an extra burst of lemon flavor)

A pinch of fine sea salt

Optional: Fresh mint leaves or mixed berries (such as strawberries or blueberries) for garnish

Instructions
 

In a medium mixing bowl, combine the fresh lemon juice, coconut milk, honey (or maple syrup), pure vanilla extract, and a pinch of salt. Use a whisk to mix thoroughly until the ingredients are completely blended and smooth.

    Add the finely grated lemon zest to the bowl and stir gently to ensure it's evenly distributed throughout the mixture.

      Taste the lemon mixture and make any adjustments needed; if it's not sweet enough for your liking, add a bit more honey or maple syrup and mix again.

        Using a funnel or a measuring cup, carefully pour the vibrant mixture into popsicle molds, making sure to leave about 1/4 inch of space at the top of each mold to allow for expansion as they freeze.

          For an added pop of flavor and visual appeal, place a few fresh mint leaves or a small handful of berries into each mold, positioning them so they will show through the clear popsicle.

            Insert popsicle sticks into the molds, making sure they are centered, and then transfer them to the freezer. Allow the popsicles to freeze for at least 4-6 hours or until fully firm.

              To easily release the popsicles from the molds, run warm water over the outside of the molds for a few seconds before gently pulling them out. They should slide out smoothly.

                Serve these delightful no-bake lemon popsicles on a hot day and savor the refreshing flavors!
