Ingredients

1 cup walnuts (or substitute with pecans if desired)

1 cup medjool dates, pitted and roughly chopped

½ cup cacao powder (or cocoa powder if preferred)

¼ cup pure maple syrup (or honey for an alternative sweetener)

1 teaspoon pure vanilla extract

¼ teaspoon sea salt

½ cup dark chocolate chips (ensure dairy-free if required)

Optional toppings: unsweetened coconut flakes, crushed nuts, or additional cacao powder for rolling

Instructions

Prep the Nuts: In a food processor, add the walnuts and pulse them until they are finely ground, taking care not to process them into a paste. The desired texture should be crumbly for the best consistency.

Add Dates: Introduce the pitted and chopped medjool dates to the ground walnuts in the food processor. Process the mixture until it becomes sticky and begins to clump together. If the mixture feels overly dry, gradually add 1-2 additional dates, processing after each addition until combined.

Incorporate Flavors: Add in the cacao powder, maple syrup, vanilla extract, and sea salt to the food processor. Pulse until all ingredients are thoroughly mixed, forming a cohesive dough-like consistency.

Melt the Chocolate: In a microwave-safe bowl, place the dark chocolate chips. Heat in the microwave at 20-second intervals, stirring in between each interval, until the chocolate is completely melted and smooth.

Combine: Carefully transfer the brownie mixture from the food processor to a medium-sized mixing bowl. Pour in the melted chocolate and stir until the chocolate is fully incorporated into the brownie mixture, ensuring a uniform blend.

Shape the Bites: Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls that are approximately 1 inch in diameter. For added flair, roll the balls in your choice of toppings such as coconut flakes, crushed nuts, or extra cacao powder.

Chill: Arrange the prepared brownie bites on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes to allow them to firm up.

Serve and Enjoy: Once chilled, your delightful brownie bites are ready to be enjoyed! Store any leftovers in an airtight container in the fridge, where they will keep fresh for up to a week.
