1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

4 slices whole grain bread

1/2 cup fresh spinach, finely chopped

1/4 cup bell peppers (red or yellow), finely diced

1/4 cup carrots, finely shredded

2 tablespoons cream cheese, softened

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

Marinara sauce, for dipping

Prep the Veggies: In a mixing bowl, combine the chopped spinach, diced bell peppers, shredded carrots, garlic powder, softened cream cheese, and a pinch of salt and pepper. Mix well until all ingredients are thoroughly combined, creating a colorful veggie spread.

    Prepare the Cheese Mixture: In a separate bowl, combine the shredded sharp cheddar and mozzarella cheeses. Stir until the cheeses are evenly blended, ready to create a cheesy filling.
