1/2 cup shredded cheddar cheese

    Prepare the Sweet Potato: Peel the sweet potato and slice it into rounds that are approximately 1/4-inch thick; you should obtain about 10-12 slices. Arrange these rounds on the prepared baking sheet, drizzling them lightly with olive oil. Season generously with salt and pepper, and toss to ensure an even coat.

      Roast the Sweet Potato: Place the baking sheet in the preheated oven. Roast the sweet potato rounds for about 20-25 minutes, flipping them halfway through cooking. They should be tender and have a slightly crisp exterior when they’re done.
