Ingredients

1 large round sourdough bread loaf (approximately 1 lb)

2 cups fresh spinach, finely chopped

1 cup cream cheese, softened to room temperature

1 cup plain Greek yogurt

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, finely minced

1 tablespoon olive oil

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon freshly ground black pepper

½ teaspoon red pepper flakes (optional, for a spicy kick)

1 cup diced bell peppers (mix of red, yellow, and green for color and garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it's ready for baking.

Prepare the Bread Bowl: Using a serrated knife, carefully hollow out the sourdough loaf, leaving about 1-inch thick walls for structure. Set the bread pieces aside for later use, such as for dipping or croutons.

Cook the Spinach: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for approximately 1 minute, or until it becomes aromatic. Toss in the chopped spinach and cook for 2-3 minutes, stirring frequently until the spinach is wilted. Remove from heat and allow it to cool for a few minutes.

Mix the Dip: In a large mixing bowl, blend the softened cream cheese and Greek yogurt until smooth. Stir in the sautéed spinach, shredded mozzarella, grated Parmesan, onion powder, salt, black pepper, and red pepper flakes if desired. Combine thoroughly until the mixture is creamy and evenly mixed.

Fill the Bread Bowl: Generously spoon the spinach dip mixture into the hollowed-out sourdough loaf, filling it to the brim.

Bake: Position the filled bread bowl on a baking tray to catch any drips. Place in the preheated oven and bake for 20-25 minutes, or until the filling is hot, bubbly, and the top is a golden brown.

Serve with Flair: Once the baking is complete, remove the bread bowl from the oven and let it cool for 5 minutes. Cut the reserved bread into bite-sized pieces for dipping, and arrange the diced bell peppers around the bread bowl for a pop of color. Serve warm, encouraging guests to dip the bread pieces into the cheesy spinach goodness!
